K232:The value of this constant is increased if for example the olives are stored before grinding for several days. The highest quality oil (extra virgin olive oil) has the K232 values less than 2.5.

K270: The value of this constant depends on how fresh the oil is. Old oils or mixtures of old  oils will  have increased K270 value. Extra virgin olive oil has typically K270 values less than 0.22.

DK: The 'DK' index is a criterion for identifying the quality and purity of olive oils. This constant indicates any mixing with another oil that is not "extra virgin." The value of 'DC' of extra virgin olive oil should be negative (with a maximum 0.01).
