Grinding
The purpose of grinding is breaking the cells of the mesocarp to make easier the release of oil and to form larger drops. Most of the oil is concentrated in the mesocarp cells.
The method used in this process are the crushers with hammer mills. It is a machine in the center of which are hammers on an axis. Olives should enter the grinding machine slowly so that their speed remains lower than the speed of the hammers.
