Defoliation

Initially the fruit passes the step of defoliation. The defoliation machine removes leaves from olives.

 

This is an important process because if the olives have high leaf content, the oil assumes a bitter taste due to the high amount of chlorophyll and the oil becomes much more sensitive to the presence of light to create rancidity.
